NEW YORK — Dirty flies, bugs and unwashed hands — restaurants across the city have dirty secrets they’d rather not share. But the New York City Health Department is watching.

Each year, inspectors make unannounced visits to more than 25,000 restaurants to check health and safety standards.

Most restaurants pass inspections, but some fall short of city standards, leading to violations Points for everything from blown lightbulbs to “public health hazards” like bugs and non-compliance with food safety protocols.

Restaurants score with non-food safety violations could get a fine or a lower letter levelwhere zero to 13 points merit an ‘A’ and offenses totaling 28 points or more merit a ‘C’ (this system is criticized for its effectiveness by some gourmets).

Public health threats that cannot be addressed on site, such as a mouse or fly infestation, pose a bigger problem: immediate closure.
